2. Special Chicken Tacos

Tacos are a perfect meal for the weekend, but you can reinvent it by using chicken. But if you just don’t want to cook longer, you can use rotisserie chicken so you can have your tacos in less than a quarter of an hour.

  • 1/2 cup cilantro, chopped
  • 1/3 cup sour cream
  • 1 large tomato, seeded and finely diced
  • 1 avocado, thinly sliced
  • 3/4 cup shredded cheddar cheese
  • 2 cups store bought rotisserie chicken, skin removed and shredded
  • 8 corn tortillas

  1. Place the tortillas on a flat surface.
  2. Evenly distribute the chicken, tomato, avocado, and cheese on the tortillas.
  3. Sprinkle sour cream on each taco and garnish with chopped cilantro. You can also squeeze a little bit of lime if you desire.
  4. Serve immediately while tacos are still crunchy.

3. Roasted Chicken Patties

If you love burger patties and crab cakes, then make it less of cholesterol by making healthy chicken patties. This recipe is also very inventive because you can actually use left over chicken roasts.

  • 1/4 cup olive oil
  • 2 cups leftover or store bought rotisserie chicken, skin removed and shredded
  • 1/2 jalapeno, ribs and seeds removed and finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1 large egg

  • 1 small clove garlic
  • 1/2 cup mayonnaise
  • 1/4 cup cilantro

  1. Mix garlic, mayonnaise and cilantro in a food processor for one minute. The mixture should be light green in color and smooth. Set aside covered in the refrigerator.
  2. Combine chicken, jalapeno, cheddar cheese and egg in a large bowl. Mush the mixture until it holds together when squeezed. The mixture can actually make 6 patties.
  3. Fry patties in medium heat for 5 minutes or until golden brown in color.
  4. Serve with the sauce.

Chicken dishes can be ordinary, but when reinventing them, they make your regular seem just that little bit more special.
