Homemade Family Recipe – Chicken Kebabs

Have a dig at this fun way to cook up a chicken kebab – even the kids will love you enough to help out! The chicken has a healthy intake of protein, plus the vegetables add essential minerals and nutrients to create a light but tasty meal. This chicken kebab goes well with salad, especially during summer. During winter it can be supplemented with rice or potatoes, to make up for lost heat.

4 chicken breasts, diced into 1 inch cubes
Red Peppers
Wooden skewers or plastic
For the marinade:
7 tablespoons, each of: olive oil, ketchup and sweet chilli dipping sauce (or whatever sauce is your preference)
4 tablespoons each of: honey, white wine vinegar (can be normal vinegar if you’re feeling a tad bit daring)
Hint of salt & pepper

This is one of those easy recipes for kids where parent and child can cooperate under the same house for once.

Get all the marinade ingredients together in a bowl.

Stir the chicken into the marinade until its all good and covered, put Clingfilm over the top of the bowl to cover, and place in the fridge for one hour.

Thread the chicken and the vegetables on the wooden skewers, alternating chicken and vegetables. Note – drown the wooden skewers in water for about twenty minutes, simply to stop them from burning in the oven.

Lightly oil a baking tray and place kebabs on tray and cook in a preheated oven at 220°C for approximately 20 minutes.

Whip up at least 2 skewers per person, and even a side dish, such as potato chips
Your kids can even help with preparing the food for once. Threading the chicken is the fun part, where the children finally ‘work’ their way to dinner.
