Two New Chicken Recipes that Won’t Break the Bank

People are always looking for low cost, delicious and healthy food. Low fat dishes are the focus for people who are health conscious, and they look for dishes that are easy to prepare. Chicken is a great source of healthy protein and very low in fat. Healthy chicken recipes can lower a person’s blood cholesterol and improve one’s health. Chicken is not only a very versatile meat, but it is inexpensive and can be prepared many different ways. Below are two healthy, low cost chicken recipes that your family can enjoy.

Marinated Chicken Breasts With Dip

Preparation – Place your boneless chicken breasts in a large bowl. Add some Italian salad dressing to cover the chicken breasts and cover the bowl and refrigerate overnight.


When you are ready to cook them the next day, place the marinated chicken breasts in a baking dish and bake them for 30 – 45 minutes at 350 degrees uncovered. The thickness of the breasts will determine the cooking time. Cut through the center to check that breasts are fully cooked.

Side Dishes

Serve the chicken with a nice creamy dressing for dipping such as Ranch or Blue Cheese. Chicken can be served with a large, colored salad with vegetables and some wild rice cooked in a chicken broth.

Oven Baked Chicken Parmesan

For Oven Baked Chicken recipe you will need the following ingredients: Chicken Breast, 1 egg, ¾ cup bread crumbs, ½ cup grated Parmesan cheese, 1 jar of marina sauce and a cup of shredded mozzarella cheese.


Mix the breadcrumbs (Italian preferred) and Parmesan cheese together and put aside. Dip the breasts of chicken in the egg (which has been beaten in a bowl) and then roll this in the missed breadcrumb/Parmesan cheese mixture. In a separate pan on the stove, warm the marina sauce while chicken is baking.


Place the breasts in a glass baking dish and bake them for 30 – 45 minutes uncovered at 350 degrees. The breasts are done when you cut the center and check for no signs of red or pink.


When done, place the chicken on a plate and cover with marina sauce, then sprinkle with Parmesan cheese. With the remaining marina sauce, you can serve this over some brown rice or whole grain pasta noodles and sprinkle with Parmesan. This dish can also be served with some sauteed vegetables and a tossed salad with dinner rolls.

When buying chicken, it can be much cheaper to buy a whole chicken versus the boneless breasts. You can do the same work as the butcher does at home and save a lot of money on your chicken by buying whole ones and cutting the breasts out. The rest of the chicken parts can be used for all sorts of chicken recipes as well. You can usually find whole chickens on sale and the processing is not difficult at all. With the chicken bones and skin you get off the chicken, you can use this to make a good chicken broth for soups and flavorings in other chicken recipes.

Low cost, healthy chicken recipes are all over and taking time to prepare them will be a breeze. Save some money and eat a lot healthier by eating more chicken.
